My famous Pancake recipe

When I say famous, I of course mean that the people that have tasted them can’t get enough. 😊 This is a fairly easy recipe. My oldest daughter and I published this recipe in a March of Dimes cookbook to help raise money for March of Dimes.

Ingredients:

  • 1 cup of flour
  • 1/2 cup of sugar
  • 1 TBsp of baking power
  • 1/8 tsp of salt
  • 1 egg
  • 3/4 cup of milk
  • 3 TBsp of melted unsalted butter (do this first so it can cool a little)
  • 2 tsp of vanilla extract

Directions:

With a wooden spoon mix the dry ingredients together in a medium sized mixing bowl and set it aside. In a smaller mixing bowl pour the milk and vanilla, and then wisk in the egg. Using a wisk vigorously, pour in the butter slowly. This keeps the butter from clumping when it hits the cold milk. Make a little hole in the middle of the dry mixture and pour in the wet mixture. Using the wooden spoon combine the wet mixture with the dry mixture. Do not over stir! It should come out to less than 50 strokes with the spoon. Its ok if all of the dry ingredients are not mixed in well. Let this mixture rest for at least 5 minutes before beginning to cook. Heat your skillet or griddle (griddle is better) to 325 degrees, and pour out the batter as big as you like, I usually make medium sized pancakes which use a little less than a 1/3 of a cup of batter. When they start to bubble up from the bottom and you can see the edge is getting done, its time to flip. I found this oversized spatula that I really like, makes sure I don’t damage the pancakes. The second side will cook in less time than was initially needed for the first side.
